Grilled cheese sandwiches are clearly one of the best foods known to man. And they are so adaptable! Add bacon. Add a huge, tasty, juicy tomato (those are coming eventually, right?), add pesto, add whatever you want (or whatever you have in your fridge).

I’m also obsessed with anything pizza. Pizza stuffed spaghetti squash. English muffin pizzas. Stuffed pizza bites with garlic butter. BBQ chicken pizza. Pizza Pizza Pizza. Pizza turkey burgers, Pizza baked pastaand pizza quesadillas. So why not combine two of the greatest foods: grilled cheese sandwiches and pizza?

This pizza grilled cheese sandwich is stuffed with pepperoni, pizza sauce and mozzarella cheese. And if that weren’t enough, it has a crispy Parmesan cheese crust that takes it right over the top!

Make It Your Own

  • Add your own pizza toppings. If you’re not a fan of pepperoni, or if you really want to stuff this grilled cheese sandwich, feel free to add other toppings such as sliced ham, crispy bacon, thinly sliced bell peppers, onions, olives, etc.
  • Make it in your air fryer. Lately, I’ve been loving my air fryer. We love air fryer grilled cheese; they get super crisp and get done quickly.
  • Try different cheese. I really love smoked provolone cheese on this sandwich, or an Italian blend cheese.

Grilled cheese like you've never had it! You're going to love this Parmesan crusted pepperoni pizza grilled cheese recipe.

Ingredients

  • 2 slices bread (I like whole grain)
  • 2 teaspoons butter, softened or spreadable
  • 1 tablespoon pizza sauce
  • 4 tablespoons shredded mozzarella, divided (or two slices)
  • 6 slices pepperoni
  • 2 tablespoons grated Parmesan cheese, divided

Instructions

  • Butter one side of each slice of bread with softened butter. Heat skillet or griddle over medium heat.

  • Spread pizza sauce on the unbuttered side of one slice. Add 3 tablespoons of the shredded mozzarella (or 1 slice) and arrange the pepperoni slices on the cheese. Top with the remaining mozzarella cheese. Place the other slice of bread on top of the cheese with the buttered side facing out.

  • On one buttered side, spread 1 tablespoon grated parmesan cheese and press down gently to adhere. Place the sandwich, cheese side down, in heated skillet or griddle. Top the other buttered side (should be face up in the pan) with the rest of the parmesan cheese.

  • Cook for 4 to 6 minutes on each side or until golden brown and cheese on the inside is melted. Enjoy immediately.

Notes

  • Measurements are approximate and will vary based on size of bread.
  • Sliced mozzarella cheese can be used in place of shredded.
  • Feel free to substitute pizza toppings of your choice for the pepperoni.

We had these as school lunches growing up. Called them Pizza Petes. The only school lunch item I actually remember nearly 20 years after graduating. Just introduced them to my kids over the weekend. Memories…
